In 1998 we began our olive orchard by planting 50 trees imported from Italy. Over the years we have added 500 trees, all grown from cuttings of Tuscan trees. We have chosen four varietals—Frantoio, Lecchino, Coratina, and Pendilino and planted them in the traditional Italian proportions (50-20-20-10). Like our grape vines, the olive trees thrive on our steeply terraced, south-facing slopes, where they are individually irrigated in the well-draining rocky soil characteristic of the Sierra Foothills. We farm the olive orchards organically and are in the process of getting it certified organic. Our latest production of olive oil was harvested in November 2009. The olives were carefully handpicked and immediately milled to ensure the highest quality olive oil.
