Our olive groves are a Tuscan blend of Frantoio, Lecchino, Coratina, and Pendilino olives in the traditional Italian ratio of 50-20-20-10. Our trees grow chemical free on our sun-drenched slopes, irrigated with Sierra Foothills spring water. This combination is yielding a wonderfully robust oil with spicy undertones and a pungent, peppery after-bite--perfect for dipping, or drizzling over fresh greens.

Our 2009 Olive Oil has been certified by the California Olive Oil Council (COOC) as 100% extra virgin olive oil. COOC was founded in 1992 as a nonprofit trade organization to promote the growing of olive trees and the production of olive oil in the State of California. In 1998 they introduced the Seal Quality Program. Only 100% extra virgin olive oils without defects can be certified and display their seal.

DSV is a COOC member and is actively engaged in the continuing education for the cultivation of their trees and the production of their olive oil.
