2006 Cabernet SauvignonIntroducing our first vintage, harvested and crushed in October 2006 and aged 20 months in French oak. Bottled in June 2008, released February 2009. 109 cases produced. An elegantly styled Cabernet Sauvignon, this wine has complexity and nuance without excessive ripeness or alcohol. Delicious black currant fruit loaded with cedar/tobacco spices is expressed in the bouquet which leads to sumptuous mouth-filling Cabernet Sauvignon fruit with notes of olive and vanilla. This wine is delicious with short ribs braised in red wine, a simple roasted chicken or a more adventuresome seafood bouillabaisse. It can also be enjoyed completely on its own.
