Tasting Notes

Our goal is to produce a distinct and elegantly styled Cabernet Sauvignon of the highest quality. A wine with richness, but with balance of all components. Complexity and nuance without being over-the-top with excessive ripeness and alcohol. In short: a kind of Bordeaux-California hybrid.

2007 was a cooler vintage at DSV and our fruit was fully ripened and harvested on October 15th. It was lightly crushed into a small fermenter and fermented for two weeks on skins. It was pressed to tank and racked to 50% new French oak barrels with the remaining being two and three year old barrels. It was lightly egg white fined prior to bottling in August of 2009.

This mountain Cabernet shows great potential with a delicious black currant/cassis fruit flavors infused with cedar. Its minerally river stone origins are apparent. It finishes with a refined tannic grip and alcohol in balance.

The aromas suggest: cedar, cassis, wood smoke, graphite, baking spices, herbs, olives, crème brulée, toffee, spiced black cherries, with a whiff of mint.

This is a sleek, elegant wine with at least a ten year aging potential. For drinking now, please decant several hours in advance.

Winegrowing

The Diamond Springs Cabernet Sauvignon is made solely from Estate fruit, organically grown and sustainably farmed, on Brent and Janie Cohen's ranch outside of Diamond Springs, California. Situated in a secluded canyon on the North Fork of the Cosumnes River, this southfacing vineyard is planted on gravely river soils that closely mimic the environment of Bordeaux. This small 3-acre vineyard is meticulously farmed and groomed by viticulturist Bill Naylor and his crews.

The clone is 337, initially brought to the U.S. in a suitcase in the late 1990s and later selected by the authoritative Institute of Research in Bordeaux called INRA. Widely, and successfully, planted in California over the last decade, the clone is appreciated for its small berries and moderate yield. The wines it produces are typically dense and complex.
